White Chocolate and Cranberry Cookies

What do I fix to go with the BBQ that I talked about in the last post?  Some of us think the BBQ by itself is enough.  However, others like my wife probably will want something more than just a course meal.  Karen makes some slaw – she still does not have a recipe that she is in love with, and would welcome suggestions, preferably ones that are not heavy on mayonnaise.  With this we also might have some type of potato and/ or baked beans. (If I make BBQ for company Karen always insists on having too much.)

For dessert I will make my current favorite cookies – white chocolate and cranberry. They are easy to make and delicious. I like them still warm from the oven with just a little bit of Blue Bell homemade vanilla ice cream between two of them. (I still have memories from one of my first football games in Chapel Hill eating a Chipwich at halftime. I don’t know if Chipwiches are still around, but I think this does them at least one better. By the way, I cannot tell you who won the football game.  My memory of Tar Heel basketball games is a little better.)

I have not figured out a way to make these cookies on the BGE, but they go great with the BBQ, or anything else.

Ingredients:

1/2  cup butter, softened

1/2  cup brown sugar, packed

1/2  cup white sugar

1 egg

1 tablespoon white rum (you can use brandy as a substitute)

1 1/2 cups all purpose flour

1/2  teaspoon baking soda

3/4  cup white chocolate chips

1  cup cranberries, dried

Directions:

1.Preheat oven to 375˚.

2. Put parchment paper or silicone liner on a cookie sheet.  (For better results place the baking sheet in the freezer for a while beforehand.)

3. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.

4. Beat in the egg and rum.

5. Combine the flour and baking soda, and then stir this into the sugar mixture.

6. Mix in the white chocolate chips and cranberries.  (Again, for better results, refrigerate the dough overnight.)

7. Drop by medium spoonfuls onto cookie sheets.

8. Bake for 8-10 minutes in the preheated oven.  For best results, take them out while they are still doughy.
