“Me and My Daddy’s Favorite Cookies”

One of the things that my son Matthew and I share is a general sweet tooth.  (Olivia and Karen share a chocolate-specific sweet tooth; William will eat almost anything that he thinks is healthy and will eat good sweets in moderation.)

None of the kids like nuts, but if you ask Matthew what he wants someone to fix for a special dessert, he will say “Me and my Daddy’s favorite cookies.”  They used to be my favorites; now they alternate with the white chocolate cranberry I have already told you about.  Thanks to Southern Living for this incredibly easy, incredibly delicious dessert that Matthew, William, and I love.  Actually, Karen loves it too, even if it is not chocolate.

Pecan Praline Cookies


 1 cup all-purpose flour

1 cup firmly packed dark brown sugar

1 large egg

1 cup chopped pecans

1/2 cup butter, softened

1 teaspoon vanilla extract


1.  Stir together all ingredients in a large bowl, blending well.  (For better results refrigerate the dough overnight.)

2. Drop cookie dough by spoonfuls onto baking  sheets lined with parchment paper or a silicone liner.  (Again, for better results, place the baking sheet in the freezer for a while beforehand.)

3. Bake at 350 degrees for 11 to 15 minutes.  (I do not like them too done, but tastes vary.)  Cool on baking sheets for 1  minute; then remove cookies to wire racks to cool completely.
