William’s Salsa

When I made  Carnitas on the Big Green Egg, I promised a recipe for the salsa that goes with them.  Here it is, and it goes well in that recipe or is great with just a few chips.  William loves it.

William’s Salsa


  • 2 Large tomatoes, diced
  • 1/2 cup cilantro
  • 1/2 Red Onion
  • Small Cucumber
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 jalapeno pepper (use the seeds if you want HOT)
  • 1 teaspoon lime juice
  • 1/2 teaspoon olive oil


  • Combine all ingredients into a bowl.
